The link between good lighting, better working conditions and productivity, is now widely recognized. However, what often occurs when a kitchen benefits from excellent lighting levels, the staff is dazzled from reflected light. When dazzling does not occur, the kitchen typically suffers from a lack of illumination that is more harmful for the safety of the staff and hygiene of the kitchen.

Lebua at State Tower is Bangkok's iconic five-star all-suite luxury hotel. Chef’s Table at Lebua State Tower, opened in March 2019, is operated by the Three Michelin Stars rewarded Chef Vincent Thierry. The restaurant celebrates the creativity and art of cooking by placing Bangkok’s first 3-star Michelin Chef right at the heart of the dining experience. Chef Vincent Thierry and his Team are surrounded on 360-degrees by guests, as this interactive concept is featured by an open kitchen placed in the very middle of the restaurant. 

Halton has been involved in this prestigious project to develop realistic and highly efficient kitchen ventilation, combining a perfect balance between contemporary design and luxury dining experience.

Better Air Quality

Halton's Capture Jet technology much more effective that standard kitchen hoods in preventing heat and cooking fumes from escaping in to the working area. This means a better air quality and a more comfortable environment for the chefs, as well confidence that the maximum amount of carcinogenic cooking fumes have been removed the kitchen.

Quiet Operation

Halton kitchen hoods are very quiet when compared to standard hoods and especially well suited for teaching and show kitchens. Pictured on the right is a Teppan Yaki style restaurant Morimoto, where chefs cook in front of customers. The Halton kitchen hoods provide adequate extraction to ensure customer comfort, but at the same time create so little noise that it doesn't hinder customers' dining experience.

Displacement ventilation

Ravenscroft also provides solutions for bringing in fresh air to the kitchens. Using low velocity displacement ventilation in kitchen not only aids the Capture Jet canopies to work even more efficiently, this method reduces the air volume requirements creating surroundings with much less draft than the standard commercial kitchen environment.
